Chipotle Ranch Grilled Chicken Burrito

A healthy and flavorful homemade version of a Taco Bell favorite.

Ingredients
  

  • 250 g Chicken breast or boneless, skinless chicken breasts pounded thin
  • 100 g Lettuce washed and shredded
  • 150 g Tomato diced
  • 100 g Red cabbage shredded
  • ½ Small avocado sliced
  • 4 tablespoon Chipotle sauce for spreading on the tortillas
  • 4 Flour tortillas Low carb (or regular flour tortillas)
  • 50 g Mozzarella cheese Shredded (for filling the burrito)
  • 1 teaspoon Taco seasoning for seasoning the chicken
  • Salt to taste

Method
 

  1. Preheat your grill or grill pan to medium-high heat.
  2. Season the chicken breasts with salt and taco seasoning.
  3. Grill the chicken until it is fully cooked and has grill marks on both sides. Remove from the grill and allow it to rest for a few minutes before slicing it into strips.
  4. While the chicken rests, wash and slice the lettuce, tomato, red cabbage, and avocado.
  5. Warm the flour tortillas on the grill or in a dry skillet until they become pliable.
  6. Spread a generous amount of chipotle sauce (about 12.5g) onto each tortilla.
  7. Place a few slices of grilled chicken onto each tortilla. Top with lettuce, tomato, red cabbage, avocado slices, and shredded mozzarella cheese.
  8. Fold the sides of each tortilla inward and then roll it tightly to form a burrito shape.
  9. (Optional) Grill the assembled burritos for a few minutes on each side to lightly toast them and melt the cheese.
  10. Serve the Chipotle Ranch Grilled Chicken Burritos warm, with additional chipotle sauce on top if desired.
