Ingredients

  • ½ cup lukewarm water helps blend batter smoothly
  • 1 cup warm milk adds moisture and richness
  • 4 large eggs provides structure
  • 4 tablespoon unsalted butter melted (plus more for sautéing) (adds richness and helps cook crepes)
  • 1 cup all-purpose flour forms the base of the batter
  • 2 tablespoon granulated sugar adds slight sweetness
  • Pinch sea salt enhances flavor

Method

  1. Add the water, warm milk, eggs, melted butter, flour, sugar, and salt into a blender. Blend on low speed until the ingredients are fully combined and smooth. Let the batter sit for a few minutes to allow the bubbles to settle.
  2. Heat a small amount of butter in a crepe pan or 10-inch non-stick skillet over medium heat. Once the butter is melted and hot, pour about ¼ cup of the batter into the pan, swirling the pan to evenly coat the bottom.
  3. Cook the crepe until the edges begin to turn golden brown. Using a thin-edged spatula, gently flip the crepe and cook for an additional 30 seconds, or until the second side is golden brown. Remove the crepe and transfer it to a clean cutting board.
  4. Repeat the process with the remaining batter, adding more butter to the pan as necessary. Once all crepes have cooled to room temperature, they can be stacked.
