Ingredients
  

  • 1 cup + ½ tablespoon cottage cheese full fat for creamy texture
  • 6 large eggs room temperature
  • ½ cup cheddar cheese shredded sharp flavor
  • 4 tablespoons scallions finely chopped, adds freshness
  • 2 tablespoons all-purpose flour or gluten-free flour
  • ½ teaspoon baking powder gluten-free if needed
  • teaspoon fine sea salt adjust to taste
  • Freshly ground black pepper to taste

Method
 

  1. Preheat the oven to 350°F (180°C), or 160°C for fan ovens. Grease a 6-hole muffin pan with butter or cooking spray.
  2. In a large mixing bowl, whisk the eggs until smooth.
  3. Stir in the cottage cheese, cheddar cheese, scallions, salt, and pepper.
  4. Sift the flour and baking powder into the mixture, then fold them in gently using a whisk just until incorporated.
  5. Spoon the batter evenly into the muffin pan.
  6. Bake in the center of the oven for 30-33 minutes or until golden and set. remove and cool in the pan for 10-15 minutes before serving.
