Ingredients
  

Meatballs:
  • 1 pound ground meat Beef or any ground meat of choice
  • 1 shallot Diced
  • 1 tablespoon minced garlic
  • 1 tablespoon olive oil For mixing
  • 2 teaspoons honey Adds a touch of sweetness
  • 1 teaspoon salt For seasoning
  • ½ teaspoon cumin Adds a warm, earthy flavor
  • ½ teaspoon oregano For Mediterranean flavor
  • ½ teaspoon red pepper flakes For a little heat
  • ¼ teaspoon black pepper For seasoning
  • 1 tablespoon fresh chopped parsley Adds freshness
Carrots:
  • 4 large carrots Peeled and cut into matchsticks
  • 1 ½ tablespoons olive oil For roasting
  • ½ teaspoon salt For seasoning
  • ¼ teaspoon black pepper For seasoning
Cucumber Salad:
  • 4 mini cucumbers Sliced
  • 1 cup grape tomatoes Halved
  • ¼ cup red onion Thinly sliced
  • 2 tablespoons olive oil For dressing
  • 2 tablespoons red wine vinegar For acidity
  • ½ teaspoon salt For seasoning
  • ¼ teaspoon black pepper For seasoning
  • ¼ cup feta Or more to taste, can substitute with dairy-free feta for a dairy-free option
  • 2 tablespoons fresh chopped parsley For garnish
Bowl:
  • 2 cups cooked white rice For base
  • 2 cups lettuce Shredded
  • 1 batch tzatziki For topping

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine all ingredients for the meatballs. Use your hands to mix everything together thoroughly.
  3. Scoop the mixture using a 1 ½ to 2 tablespoon scoop and roll into balls. Squeeze tightly to ensure they hold their shape.
  4. Arrange the meatballs on a baking sheet lined with parchment paper. Repeat until all the mixture is used. You should get about 16 meatballs.
  5. Peel and cut the carrots into matchstick shapes. Toss them with olive oil, salt, and pepper.
  6. Add the carrots to the same baking sheet, positioning them next to the meatballs.
  7. Roast the meatballs and carrots in the preheated oven for 20-25 minutes, or until the meatballs reach an internal temperature of 165°F (74°C) and the carrots are fork-tender. If you prefer softer carrots, remove the meatballs and continue roasting the carrots.
  8. Meanwhile, prepare the cucumber salad by combining all ingredients in a bowl. Taste and adjust the seasoning to your liking.
  9. To assemble the bowls, start with a base of rice and lettuce. Top with cucumber salad, meatballs, roasted carrots, and a generous scoop of tzatziki. For extra flavor, add roasted red pepper sauce or tahini dressing if desired.
