Ingredients
  

  • 1 pound lean ground beef use ground turkey or chicken as an alternative
  • Salt and freshly ground black pepper to taste
  • 5 cloves garlic minced (adds a burst of flavor)
  • 1 Tablespoon sesame oil for authentic flavor
  • 1 Tablespoon freshly grated ginger or substitute with ΒΌ teaspoon ground ginger
  • β…” cup light brown sugar adds sweetness to balance the heat
  • 1 cup low-sodium soy sauce for a salty depth
  • 2 teaspoons Sriracha hot sauce or substitute with crushed red pepper flakes or chili garlic sauce for heat
  • 1 bunch green onions chopped (half for cooking, half for garnish)
  • Hot cooked brown or white rice for serving
  • Fresh cucumber sliced (for serving, adds a fresh crunch)

Method
 

  1. Heat a large skillet over medium-high heat. Season ground beef with black pepper and add it to the skillet. Cook, stirring frequently and breaking the meat into small pieces with a wooden spoon until browned. Drain off excess grease. (Optional: use a food processor to pulse the beef into finer pieces before cooking.)
  2. Add sesame oil, minced garlic, and grated ginger to the skillet. Stir well to combine.
  3. Stir in the brown sugar, soy sauce, and Sriracha (or substitute hot sauce). Cook for 3–5 minutes, allowing the sauce to slightly absorb into the meat.
  4. Add half of the chopped green onions to the beef mixture, stirring to combine. Save the rest for garnish.
  5. Serve the Korean ground beef mixture over hot cooked rice. Top with fresh cucumber slices and remaining green onions.
