Ingredients
  

  • 3 cups fresh peaches about 6 peaches, peeled and chopped
  • 2 tablespoons fresh lemon zest from 2 lemons
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar or adjust to taste
  • 6 cups cold water divided into 2 parts
  • 1 cup fresh lemon juice from 4-5 lemons
  • Ice optional, for serving
  • For garnishing:
  • Lemon slices for garnish
  • Fresh peach slices for garnish
  • Fresh mint for garnish

Method
 

  1. In a medium-sized saucepan, combine the chopped peaches, lemon zest, vanilla extract, sugar, and 2 cups of cold water. Cook over medium heat until the peaches are soft and easily mashed, about 15-25 minutes.
  2. Use a masher or wooden spoon to mash the peaches to release their juices.
  3. Remove the saucepan from heat and let the peach mixture cool to room temperature. Then, refrigerate it for at least 1-2 hours to allow the flavors to meld.
  4. Once the mixture has cooled, strain the peach solids from the liquid using a fine mesh strainer. Discard the solids or save them for another use (like adding to smoothies or baked goods).
  5. Stir in the fresh lemon juice, remaining 4 cups of cold water, and ice if desired.
  6. Pour the lemonade into glasses, and garnish with lemon slices, fresh peach slices, and mint leaves.
